Maui Chopper is a reality show that covers a highly trained emergency response team. The members of Maui Chopper handle critical situations in various areas on the island. Team members must be prepared to venture out into remote areas on the island in order to render their service.

Maui is a beautiful island, but it cannot be underestimated. A sudden emergency can surface at any moment. Maui Chopper shows how the team rescues people from fires, potential drownings, and medical emergency situations. Cameras are always rolling during each episode. Viewers get an opportunity to see how a first class emergency response team operates.

An injured hiker is lost in the deep jungle of Maui. Don and Pete scramble Air One and Air Two to find the victim before it's too late. Finding him lying in a pool, the victim is lucky to be alive - and luckier that Windward was there to pick him up. Manny's effects a rescue from the crater of a volcano at night and the whole crew pay their respects to a fallen hero.

Pink-loving chief Pilot Pete Vorhes thinks "it's not about what you drive but what you fly. The Windward crew steal his car while he's out on a job and respray it. He also turns out to be the hero of this episode as he puts out a fire that threatens a neighbourhood where Windward mechanic Keith lives.

Chopper pilot Manny races to save the life of a woman, who's husband reported missing after she went wind surfing in shark infested waters. The fire department runs out of water while fighting a blaze on Maui's coast, causing the Windward Aviation crew to help them out. Lastly, Don takes a pilot leaving the team personally.

A woman receives a massive head trauma while hiking along Maui's treacherous coast, and Don Shearer, Windward's owner, may be her only chance of surviving. Meanwhile, pilot Pete from Don's crew, has the task of flying beautiful swimsuit models to a remote location on the island.
